Fig & Burrata Salad

July 17, 2019

Figs are a great summer fruit. They taste amazing in baked goods, salads, and sauces. They are also a source of fiber and vitamins A, C, K, B, potassium, magnesium, zinc, copper, manganese, and iron.

Dr. Lim’s fig salad is a quick, easy, and delicious way to get yourself a good ‘ole serving of figs.

For every 2 baskets of figs, 1 tub of burrata, and enough mint to “make it look pretty.”

Delicately cut figs into quarters.

Cut or pull the burrata apart into your preferred bite-sizing.

Add a light sprinkling of lemon juice, salt, and a drizzle of balsamic glaze.

Tear mint off stalk and toss over salad.

This dish pairs nicely with our Tortillas de Patatas recipe.

Best served on an outdoor patio with good friends and good coffee. .
