Ingredients:
3 cups rice
1 can coconut milk
3 cups water
2 cups freeze-dried mango, chopped
¼ cup condensed coconut milk (optional)
1 tsp flaky salt (to taste)
Directions:
Begin by rinsing the rice until the water runs clear.
Combine coconut milk, rice, and water in a rice cooker.
While rice is cooking, chop freeze-dried mango.
Once the rice is cooked, combine coconut rice and mango.
Add salt to taste and optional condensed coconut milk for added creaminess and sweetness.
Press the rice into the pan, making sure it's tight and compact. Let the rice sit for 3-5 minutes.
Once the mixture has set, cut into individual rice squares and wrap for later or enjoy now!
