Lentine Alexis x Skratch Peach Passionfruit Popsicles
Raise your hand if you love a popsicle on a hot summer day? NOW, raise your hand if you wouldn’t mind that chill pop to help you rehydrate after a hot ride/run/hike/climb? These popsicles were all the rage at RedBull Formation this past spring, where athlete, chef + former Skratch Labs squad member, Lentine Alexis was hiking ice cold popsicles up canyons in a cooler backpack to help some of the most inspirational, hard-hitting ladies in the freeride world cool off before taking flight, crushing lines + innovating the landscape of women’s freeride.
You’re gonna need fresh peaches and frozen passionfruit to blend together these stellar summer treats...and if you can’t find frozen passionfruit you can sub in mango for an equally excellent popsicle. Don’t forget to add a couple scoops of Skratch Labs seasonal Peach Sport Hydration Mix!
Peach-Passionfruit Popsicles
Makes 10 popsicles
Ingredients
1cup orange juice
1 ½ cups chopped fresh peach, plus ½ peach for garnish (optional)
1 ½ cups frozen passionfruit chunks
½ tsp kosher salt
2 ½ scoops Skratch Labs Peach Sport Hydration Mix
Directions
Stuff the ½ cup of chopped peach for garnish into the bottoms of 10 popsicle molds. Set aside. Combine all of the remaining ingredients in the bowl of a high-powered blender and blend until smooth. Divide evenly between popsicle molds, tapping the molds on the countertop to be sure that the thick mixture settles into the bottom of the mold (this prevents partial popsicles when you unmold them!) Poke 10 popsicle sticks into the molds, then place in the coldest part of your freezer for at least 4 hours and preferably overnight. Unmold and enjoy!
